I have always loved lemon bars. It reminds me of warm summer days at my grandma’s house. We used to sit on her patio with a glass of peach tea, and she ALWAYS had lemon bars on hand (they were my grandpa’s favorite). Now that my grandparents are no longer around, I make my own lemon bars and remember back to those summer days. I found this recipe and thought it was a great take on one of my favorite memories. They offer a great balance between sweet and sour, and are a great, refreshing treat. I hope you enjoy them as much as I do!
Raspberry Lemonade Bars

Tips
- Zest, then juice the entire lemon at the beginning. Makes it easier and it’s ready when you start the glaze.
- Wait for the bars to cool completely before adding the glaze.
Bar Ingredients
- ½ cup butter, softened
- ¾ cup granulated sugar
- 2 eggs
- 1 Tbsp lemon juice
- ¼ tsp salt
- Zest from ½ lemon
- ¾ cup all purpose flour
- 1 cup fresh raspberries
Glaze Ingredients
- 1 cup powdered sugar
- 1 Tbsp seedless raspberry jam
- Zest from ½ lemon
- 1 Tbsp lemon juice
Preparation
- Preheat oven to 350 degrees. Spray 8×8 baking dish with non-stick cooking spray.
- In a large bowl, combine butter, sugar, eggs, lemon juice, salt, and zest. Add flour and mix until combined. Fold in raspberries. Pour into prepared baking dish and spread into an even layer.
- Bake for around 25 minutes, or until edges are brown and the middle is set. Do not over bake, you want the texture to be like that of a brownie. Let it cool.
- While the bars are cooling, combine the glaze ingredients and whisk together. Pour over cooled bars. Let set about 20 minutes, cut into squares, and serve.
