Anniversary Dinner for Two: The Dessert

Raspberry Chocolate Mousse

Ingredients:

  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar
  • 8 ounces semi-sweet chocolate, chopped
  • 1/4 cup unsalted butter
  • 4 large eggs, separated
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Whipped cream and additional raspberries for garnish

Instructions:

  1. In a small bowl, combine the fresh raspberries and granulated sugar. Mash them together with a fork to release the juices. Set aside.
  2. Melt the chocolate and butter in a heatproof bowl set over a pan of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  3. In a separate bowl, beat the egg yolks, powdered sugar, and vanilla extract until light and creamy.
  4. Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring continuously until well combined.
  5. In another bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the chocolate mixture until no streaks remain.
  7. Spoon a layer of the raspberry mixture into serving glasses or bowls, followed by a layer of the chocolate mousse. Repeat the layers.
  8. Refrigerate the mousse for at least 2 hours or until set.
  9. Before serving, garnish with a dollop of whipped cream and fresh raspberries.
