As stated in the title, this dish is a classic. I first had this back in my Hamburger Helper days. I loved it then, and I love it even more, now that I make it from scratch, and with better quality meat. But I’m not gonna lie, I still grab some Hamburger Helper from time to time just for a quicker dinner. But homemade is definitely the way to go if you have the time. You can stretch this dish out by also making some mashed potatoes. I mix the stroganoff with the noodles and place that over the mashed potatoes. (Kind of like gravy). Or swap out the noodles and just use mashed potatoes as the base. It’s very filling and you can refrigerate and/or freeze any leftovers. Dinner today, lunch tomorrow. Give it a try.
Ingredients
- 1 1/2 pounds of beef sirloin steak, about a 1/2 inch thick
- 8 ounces fresh mushrooms, sliced (I used baby bella mushrooms, but you can use any mushroom you want.)
- 2 medium onions, thinly sliced
- 1 garlic clove, finely chopped (or a squeeze from the squeezable garlic bottle)
- 1/4 cup butter
- 1 1/2 cups beef broth
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 teaspoon Worse sauce (Worcestershire….so much easier to say and type Worse sauce.)
- 1/4 cup all-purpose flour
- 1 1/2 cups sour cream (This is a guess. Just dump in, stir and taste. Start with a little and add until it’s perfect for you.)
- 3 cups hot cooked egg noodles (or mashed potatoes, as stated above.)
Preparation
- Cut beef across grain into about 1 1/2 x 1/2 inch strips.
- Cook mushrooms, onions and garlic in butter in skillet, over medium heat, stirring occasionally, until onions and mushrooms are tender. (I use my cast iron pan, of course. It’s a 12 inch skillet.)
- Remove from skillet.
- Cook beef in same skillet until brown.
- Stir in 1 up of the broth, the salt and Worse sauce.
- Heat to boiling, then reduce heat, cover and simmer for 15 minutes.
- Stir remaining 1/2 cup broth into flour; stir into beef mixture.
- Add onion mixture and heat until boiling, sirring constantly.
- Boil and stir one minute.
- Stir in Sour cream and heat until hot. (Do not boil.)
- Serve over noodles or mashed potatoes. (Or both.)
Total Time: Roughly 40 minutes
