Growing up, one of my favorite desserts was my Grandma’s Lemon Cake. It was just the right amount Tart, sweet and tangy. The blob of cool whip on the top didn’t hurt either! My grandma would make this for anniversary’s, my grandfather’s birthday, Mother’s Day, and just because! I am pretty sure there was always a lemon cake in the house!
The smell of it baking makes your taste buds dance with delight, and your mouth waters just a little bit from the anticipation of the lemon.
As my grandma got older, the cakes became more of a treat because one of us grandkids weren’t at her house all the time anymore. BUT that meant they were more of a treat. I remember when I would go there and peak in the freezer, if there was a tub of cool whip, I knew there was lemon cake to be eaten!
The corner pieces are the best. My mom and I would argue about which ones we wanted. I know, there are 4 corners, but my grandfather got the first one!!
Now that Grandma has passed, my mom carries on the tradition of the lemon cake for our get togethers! The recipe hasn’t changed or been “updated” It’s the same way she made it for the past 50 years.
My mom and I now argue over the corner pieces with my kids, and it brings me so much joy to see my kids enjoying my favorite dessert and all the memories that come with it.
